How to Make an Easy Mediterranean Chicken

Life some days can be challenging. I needed a special chicken dish for a celebration for two. I had chicken thighs so that is what I used. Y'all can just as easily use chicken breasts or even a cut up small whole chicken. I call it Mediterranean Chicken but it has California written all over it in the subliminal manner. Y'all could very easily assemble this the night before and just slide it in the oven when you return from work for an easy supper. Now lets roll up our sleeves, take off our rings, wash our hands and get cooking the easy way.

Mediterranean Chicken

Ingredients:

4 chicken thighs (any chicken will do)

1 medium cooking onion thin sliced

1 medium green pepper diced (optional)

1 4oz can mushroom stems and pieces drained

1 cup dried California plums diced (aka prunes)

1 cup California salad olives

1 Tablespoon Olive Oil (EVOO is OK)

2+ Tablespoon chopped garlic

2 Tablespoon Worcester sauce

1 teaspoon dry basil

1 teaspoon Sea Salt

½ teaspoon fresh ground pepper

½ teaspoon ground nutmeg

Water (aka Chateau de Spigot)

1 12oz jar chili sauce (Heinze is my favorite)

Directions:

Preheat oven 375. In a small bowl mix chili sauce (rinse jar with a small amount of water and add that too), Worcester, salt, garlic, basil, black pepper, nutmeg and oil, set aside. In a 2 ½ - 3 quart casserole place chicken, layer on top the onions, green peppers, mushroom stems and pieces, olives, and dries plums, pour chili sauce mixture over this, cover and bake 90 mins. Allow to stand 5-10 mins before serving.

Notes:

I like to serve this with some kind of starch.. My first choice is polenta (Corn meal), followed by rice or Orzo pasta. Garlic bread and a cold crisp mixed green salad. Every meal should end with something sweet. This recipe does reheat well in the microwave. Makes a nice lunch the next day, your buddies at work will be jealous.
