How to Make Easy Olive Chicken

30 Min Meal

Raechel Ray has made the 30 minuet meal a household description. I however know that most women fix supper in 30 min or less, most nights while helping with Geography and Algebra homework, doing laundry, and comforting a broken heart simultaneously. This recipe is one that I stole from an old friend and modified with these gals in mind. I also know a warm kitchen is very conducive to family love, conversation, and giggles. Let's roll up our sleeves, take off our rings, wash our hands and get cooking.

30 min Chicken Thighs

Ingredients:

6-8 skinless boneless chicken thighs

1 softball sized onion diced

½ cup black strap molasses (your favorite)

3 Tablespoon worcestershire sauce (your favorite)

3+ Tablespoon chopped garlic

7 oz jar olives drained (I like salad olives)

Directions:

Preheat oven to 425. Mix molasses worcestershire sauce, onion and garlic. Grease a 9 x 13 deep dish and place chicken in it. Pour molasses mixture over top. Add olives, cover and bake 30 min.

Roasted Potato and Asparagus

Ingredients:

1½ pound Red potatoes (new potatoes also work)

1 Tablespoon fresh rosemary

1 pound fresh asparagus (Frozen will work)

olive oil, salt, pepper

Directions:

Preheat oven to 425. Cut potatoes in about 1" Place skin side down on ½ baking sheet sprinkle with rosemary Place asparagus in single layer on ½ the baking sheet. Drizzle olive oil, salt, & pepper over entire sheet and place in oven 30 min.

Notes:

These recipes are a perfect compliment to each other. They bake well together. Cutting red potatoes I use the method to judge size. Cut them the same size as your thumb from the end to the first knuckle.

Left over chicken is great for a cold sandwich or diced on top of a tossed salad. Both will make your pals at work jealous. Y'all know the perfect ending to every meal is something sweet.
