How to Make an Easy Orange Cornmeal Cake

With Olive Oil Too !

The Queen Goddess wanted something sweet but light for a picnic supper dessert. I dug through the archives and found an orange cake recipe that I hadn't made in years. I honestly don't recognize the handwriting on the recipe card. Who ever gave me this recipe Thank You. If I stole it I'm sorry but it is divine and delightful. The frosting is a bit unique too. I hope this pleases you and your friends and family. This is a single layer cake but doubles easily if you choose to make it a layer cake. Beware! It does call to you in the middle of the night ...Eat Me! OK let's roll up out sleeves, take off our rings, wash our hands and get baking.

Citrus Cornmeal Cake

Ingredients:

½ cup pure olive oil (Not EVOO it's too strong a flavor)

2 large eggs room temp

1 6oz can frozen OJ thawed not diluted, divided

2 cups sugar divided

1 cup all purpose flour

1 cup cornmeal (I like yellow best)

1 Tablespoon Baking Powder

1 teaspoon Sea Salt

1 8oz bar cream cheese (use your favorite) room temp

1 stick of butter room temp

½ cup honey (Your favorite)

1+ cup Powdered sugar

2 Tablespoon vanilla

½ teaspoon Sea Salt

Directions:

Preheat oven to 375. in a large mixing bowl whip together the oil, eggs, ½ cup OJ concentrate, 1 ½ cup sugar. Fold in flour, corn meal, salt, baking powder. Pour into 9" greased pan and sprinkle with ½ cup sugar. Bake 35-40 mins or till toothpick comes out clean. Allow to cool 10 min in pan and then remaining cooling time on rack. Whip the remaining 2 Tablespoons of OJ concentrate, butter, cream cheese, vanilla, salt, powdered sugar, and honey together, chill for 45 min for s delightful frosting.

Notes:

I have found it difficult to buy 6oz frozen OJ. I thawed a 12oz can used what I needed for the cake and mixed the balance with water for some fresh OJ for breakfast tomorrow. I do like the extra pulp type juice for the cake and the juice is OK. I found a note on the back of my tattered recipe card a note that frozen lemon aide works well also with no other changes to the recipe. Unlike most cakes I like this chilled and served with soft ice cream.
