How to Make Easy Peanut Brittle

* 1 cup granulated sugar

* 1/2 cup white corn syrup

* 1 cup roasted, salted peanuts

* 1 tsp butter

* 1 tsp vanilla

* 1 tsp baking soda

1) Peanut brittle is a great treat for any holiday, or a fun addition to party treats. I have made this up for treat bags on lots of fun occasions. Try changing the nuts to pecans for a tasty change.

2) Begin: In a 1 1/2 quart casserole, stir together sugar and syrup.

Microwave on high for 4 minutes. Stir in peanuts.

3) Microwave on high for 3 to 5 minutes, until light brown. Add butter and vanilla to syrup, blend in well. Microwave on high for 1 more minute. Peanuts will be lightly browned, and the mixture will be very hot. Add baking soda and gently stir until light and foamy.

4) Pour mixture onto lightly greased cookie sheet and let cool for 1/2 to 1 hour. When cool, break into small pieces and store in airtight container. Peanut brittle will be ready to eat!

* Mixture will be very hot, so if doing this with kids, please watch carefully!
