Ingredients
2 Large Chicken Breast (boneless & skinless)
2 Thick Cut Bacon Strips
1 Tomato
2-3 Large Basil Leaves
1 Fresh Mozzarella Cheese
Olive Oil
Salt & Pepper
Pre-Heat Oven to 375 degrees F
Pre-Heat large saute pan on medium heat.
First thing is you want to wash the chicken breast with cold water and then pat dry with towel or paper towel. Once dry you want to slightly pound the thick end of the chicken breast so that it is more even. Pour 1 tablespoon of olive oil on each chicken breast and season with salt and pepper. Put 2 Tablespoons of olive oil in heated saute pan. Place seasoned chicken in saute pan and let brown for 3-4 minutes on each side. While the chicken is cooking in pan you'll want to prep the rest of the dish. Slice tomato into thick slices, same with the mozzarella. Once the chicken is done browning you'll want to place a slice of basil, tomato, and mozzarella cheese on top of browned chicken breast. Then wrap a piece of bacon around the chicken, holding the tomato and cheese in place. Put the chicken in the oven for 10-12 minutes or until the internal temp reaches 160. After you pull out the chicken cover the chicken with tin foil and let the chicken "rest" for 10 minutes before you plate.
