How to Use Up Extra Green Peppers

One of the first recipes that come to mind when having extra peppers is the classic dish of stuffed green peppers. There are so many different recipes for this classic dish, though they all usually include the common ingredients of peppers, ground beef, rice, and tomatoes. The recipes may have alterations with different herbs, spices, and amount and form of tomatoes. Some kitchens will use prepared tomato soups or juices as the sauce to the stuffed peppers, while others stick to stewed or diced tomato varieties. Another alteration for stuffed peppers includes southwestern ingredients such as enchilada sauce and corn. All these products work well and prevent the meat and pepper from drying out.

Stuffed Green Pepper Soup

If you enjoy a good stuffed pepper, then you will most likely enjoy a big bowl of stuffed pepper soup. This soup is so tasty it even fares well in the summertime when using the fresh ingredients of garden peppers and tomatoes. Serve this up with some fresh baked bread and you have a fabulous meal. Add complimentary items such as cheese, croutons, hot sauce, or sour cream to your soup.

Sausage and Peppers

For a simple summer meal try the combination of sausage, peppers and onions. The process begins with grilling some mild or spicy Italian sausages. Take a few peppers and a sweet onion and julienne the vegetables. Sauté in olive oil until tender and serve with the peppers over a bed of linguine or penne. Add a little diced fresh tomato, Italian parsley, and Romano cheese and you have a great colorful summertime meal.

Pepper and Egg Sandwich

This is a favorite dish around lent, but also tastes good in the summer with garden ripened bell peppers. It all starts with sautéed peppers and a few onions. Beat in an egg or two and serve on French bread with a little shake of parmesan cheese.

Shish kabob

Shish kabobs are another creative way to use up extra green peppers and meats all in one easy to prepare meal. It all starts with wide cuts of peppers, onions, chicken or steak, and whole mushrooms. Skewer the meat and vegetables together and coat with a little oil, salt and pepper. Grill the kabobs until meat is done and vegetables are tender and serve with fresh bread or on a bed of rice. The grilled peppers and onions will take on a sweet roasted flavor.
