How to Make an EZ Easter Buffet

It seems like I only make pumpkin muffins or pumpkin bread in the Fall or Winter. Spring is just around the corner and I'm still looking for the easier, softer way to feed the desirers of my family and friends. I found these concepts in a church cook book, added the Bubba touches and we have a Easter buffet that is so easy even Don Pennington could make it. If you feel challenged in the kitchen these recipes that basically just open can or box, stir, bake, and enjoy. Now would someone put on a pot of Columbian coffee ,while we roll up our sleeves, take off our rings, wash out hands and get cookin'.

EZ Pumpkin Bread

Ingredients:

15oz can pure pumpkin (not pumpkin pie filling)

14oz can sweetened condensed milk

1 yellow cake mix (cheapest you can find)

1 box 8 serving size instant vanilla pudding

½ cup oat bran

1 Tablespoon vanilla

1 teaspoon Pumpkin Pie Spice

1 teaspoon salt (optional)

1 Cup raisins (optional)

Directions:

Preheat oven to 375. Mix all ingredients well. Pour into 2 greased loaf pans. Bake 30-35min or till pulls away from sides of pan. Cool 10 min in pan and invert to cooling rack. Serve with whipped cream cheese and hot robust Columbian coffee.

Note:

If you prefer muffins. This makes 2 doz. Reduce cooking time to 15-20 min and use cup cake papers. In your muffin tin.

Ham & Pineapple Breakfast Strata

Ingredients:

20oz can crushed pineapple drained

1 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon salt (optional)

1 stick butter room temp

4 large eggs (Chicken or duck)

5-6 slices bread cubed (use your favorite)

1#+ ham cubed (I like deli ham)

2 cups grated cheese divided (I like taco blend)

Directions:

Preheat oven 350. Cream butter, brown sugar, cinnamon, salt, and eggs together. Fold in ham, 1 cup cheese, and drained pineapple. Fold in bread. Pour mix into a greased 9x13 casserole. Bake 45min, top with reserved cheese, bake 15min more.

Allow to stand 5-10 min before serving

Note:

Mix drained pineapple juice with OJ for a refreshing breakfast drink. If you need some Spirits in the morning add vodka.

Blue Cheese Slaw

Ingredients:.

1 bag cole claw mix

½ jar blue cheese salad dressing (your favorite)

½ + cup blue cheese crumbles (to taste)

20oz can pineapple tidbits drained (optional)

1 teaspoon salt

fresh cracked black pepper (to taste)

small jar salad olives (optional)

½ cup sunflower nuts (optional)

Directions:

Toss it, chill it, serve it

Note:

Doubles well, holds for 2 weeks or more in refrigerator.
