How to Make EZ Porcupine Meatballs

With the cooler temps we tend to eat more of the casserole type dishes. My ex-wife was the inspiration for this dish and my kids loved it served over mashed potatoes. If you use instant mashed potatoes add a bit of extra butter for the homemade taste. My grandchildren also enjoy this dish more often since I have reduced the cooking time from the original recipe. Mike the lover of the Queen Goddess cheesy biscuits prefers this with two cheesy biscuits. EZ Porcupine Meatballs

Ingredients:

1 cup long grain rice

2 cups beef broth

2 Tablespoons Worcestershire sauce

1 ½ pound ground chuck (any ground meat will work)

2 large eggs slightly whipped

1 Tablespoon sweet Paprika

1 Tablespoon Garlic Powder (not garlic salt)

1 teaspoon dry Oregano

1 teaspoon dry Basil

1 15oz can diced tomatoes

1 8oz cam mushroom stems and pieces drained

1 softball sized onion sliced into slivers (slice it North to South instead of East to West)

1 26oz jar of spaghetti sauce (your favorite)

2 Tablespoon sugar (splenda does work)

Directions:

First make rice with broth and Worcestershire sauce, set aside to cool. In a deep heavy bottom pot pour spaghetti sauce, sugar, diced tomatoes, mushrooms, and onion slivers, put on med-high heat. In a large bowl mix meat, cooked rice, eggs, spices, (use your hands that's why God gave them to you). Form golf ball size meatballs. You should get 24 or so. When the sauce is boiling drop the meatballs in, cover, reduce heat to low and simmer 15-20 mins.

Notes:

Like a said earlier the kids like this over whipped potatoes. The Queen Goddess and I know that many carbs would not be good for us. We serve it plain with Garlic Toast and a huge green salad.
