How to Make Fast and Easy Highly Nutritious Vegetable Soup

Vegetable Soup the Way YOU like It

Here's the fastest, easiest way to customize Vegetable Soup making it healthier and more pleasing to everyone in 3 minutes or less.

Start with a can of your favoite soup. It's okay to choose Chicken Noodle or some other variety that doesn't have any vegetables in it. If you want a suggestion start with Minestone. If this soup is for your kid(s) start with what they like.

Boil about a cup of water and add a favorite vegetable. Frozen broccoli florets, green beans or green peas are the usual choice at my house. Once the vegetable is tender add your can of soup, 1/2 of the soup can of Swanson Organic Vegetable Broth and any leftover veggies in the fridge. Voila! Soup's ready!

TIPS

Add already cooked brown rice.

If you want more protein add already cooked chicken or your favorite canned beans.

Add some tomato sauce for more tomato flavor and to boost the lycopene content. In other words you can creatively add what you/your family likes.

MORE TIPS

Cook a large portion of brown rice (not instant) like Mahatma or Kroger brand. Freeze it in small portions for use in recipes like this soup.

Freeze the broth in an ice tray so as not to waste any from forgetting it's in the fridge. Add a few cubes to your cooked vegetables.

Mix two cans of your favorite soups (like Chicken Noodle and Chicken Tortilla) doubling the amount of everything and have even more servings.

SNEAKY TIP

If you want your family to eat a vegetable like broccoli but someone (even you) insists they wouldn't touch it, take the tender vegetable water and all and BLEND it until you have a green "soup". Once you add all the rest of the ingredients no one will know about the hidden veggie. Very healthy to all!

    I have a recipe for a spinach onion soup that my son thought he would never try because he hates spinach, but he ate this stuff up and asked for me. You can be a bit sneakier with veggies in soups and such. Good tips.
