How to Make a Fig, Ham, Cheese Wrap or Pin Wheel

The media has mafe the wrap a special even for many folks. I feel the wrap makes a great snack or light meal if served with a good bowl of soup. There is yet another use durring the Holiday season. If you slice the wrap about 1" thick and place on a silver tray you have a delightful appetizer to enhance a wine and cheese bar or perhaps you are like me and enjoy a Noshery or Tapas style party. This particular wrap has Fig Butter as the spread. The Fig Butter recipe is simple and delightful in many other applications. It is now time to roll up our sleeves, take off our rings, wash our hands and get cooking. Put some sing a long music in the CD player.

Fig Butter

Ingredients:

10 oz pkg. California figs

¼ Cup Granulated Sugar

1 ½ cup apple juice (apple cider is OK)

1 teaspoon sea salt

2 Tablespoon lemon juice (green bottle is OK)

Directions:

Remove stems and quarter figs place in sauce pan, add sugar and salt bring to a simmer 40 mins check if figs are tender. (you may need to add more apple juice) Put into blender or food processor add lemon juice and puree. You want about the consistency of apple butter. Allow to cool before putting in pint jars. Yield should be about 2 pints.

Wrap or Pin Wheel

Ingredients

12" tortilla (your favorite)

Deli Ham Shaved or thin sliced

Swiss Cheese thin sliced

Fresh Baby Spinach leaves

Red Onion thin sliced

Fig Butter (recipe is above)

Directions:

Spread fig butter over entire tortilla leaving a 1" boarder on the half closest to you, all the way to the edge on the other half. Go light on the ingredients so it will roll easily and not have things fall out. Place cheese in a single layer down the middle, next layer in the ham, followed by the spinach, and just one row of onion running down the center Roll tight, away from you.

Notes:

If not serving immediately wrap in plastic wrap. If you are making Pin Wheels it is best to wrap them in plastic wrap and chill at least an hour or overnight before cutting.

I made these pin wheels for the Queen Goddess to take to a pot luck. The gals went wild and we didn't get any.
