Fish Noodles with Carbonara Sauce
Ingredients
1 pound white fish filets (Lake white fish, Cod, Cat fish etc)
4 egg yolks (room temp)
4 egg whites (room temp)
1 Tablespoon red pepper flakes
1 Tablespoon sea salt
2 Tablespoon Garlic powder (divided)
½ pint whipping cream (room temp)
1 Cup Parmesan Cheese (Green Box stuff)
1 Tablespoon Black Pepper
½ pound deli bacon (diced)
2 Tablespoon brown sugar
Directions:
First brown bacon in a heavy bottom pot, when it is about half done add brown sugar. When bacon is crisp remove skillet from heat and allow to cool. In a warm bowl whisk together room temp egg yolks, whipping cream, and 1 Tablespoon garlic powder. Set aside. Cube fish filets into 1" cubes and place in food processor. Add room temp egg white, 1 Tablespoon Red Pepper Flakes, 1 Tablespoon Garlic Powder and sea salt Puree, till smooth. Put this puree into a piping bag with a flat tip. Squeeze piping bag gently to put puree into a simmering (Not Boiling) water bath. Allow to simmer for 5-7 min. Crumble bacon, mix crisp Bacon and egg yolk mixture. Using slotted spoon or wire nest pick fish noodle from simmering water and place on platter. Pour Carbonara sauce over it and serve with a crusty bread and a tossed green salad.
Note:
I haven't yet tried this with caned salmon or canned tuna but it sounds like it would be delicious. It also would be a go to item when you have unexpected company arrive. The carbonara sauce is also great over store bought pasta for a quick supper.

I don't know about fish noodles.
I recently saw on the PBS program "Fork in the Road" a similar recipe. Perhaps he too went to Monn Light Bay. Mizpah ;-}}>
