Having a garden is a good idea but the big problem is that gardens need to be tended regularly. It's hard to grow things from a distance which is why these are much harder to have.
You need to plant things that will basically take care of themselves. This means that you find foods that are designed to grow naturally in your climate. Look at your zone and match plants exactly to that zone. The average sunlight and rainfall will be good enough to basically keep these alive. Plant extras as you will have some that do die from disease or pest problems.
Use some long term watering strategies to take care of these plants while it might not always be raining. There are many simply devices that you can use that will water the soil on it's own for a few weeks. Each time you visit this location, you can set up the watering devices again.
You could go with some trees. There are things like nut trees and fruit trees that don't need to be tended daily. You can check up on these every once in awhile to take care of any issues.
Many berry bushes will take care of themselves fairly well. Bushes are resilient and don't need as much care as other plants.
You might also plant a variety of natural greens on the property. These are very nutritious and the right ones don't need any care at all.
All of these give you some food production at your bug out location at minimal effort.
