The first step is to remove the skins. The process to do this is very easy. Put a large pot of water on the stove and when the water is boiling put a few tomatoes at a time in the pot for just about a minute, then put them in a bowl of ice water. Take them out and the skin will slide right off of the tomato.
Next cut the tomatoes in quarters and remove the stem and any bruises. Next you need to squeeze any water out of the tomato and use your fingers or a spoon to remove the majority of the seeds. Use a strainer to put the tomatoes in after you squeeze each one as this will help drain any excess water. The liquid can be saved if you wish, to make a glass of fresh tomato juice.
After you have finished with all of the tomatoes use freezer bags or if you prefer lock tight bowls to put the tomatoes in. If using bags or bowls make sure to leave a little room for expansion and with bags squeeze out all the extra air. When winter hits and you are craving some hot soup or chili simply thaw a bag of tomatoes to add to your dish.
Fried green tomatoes or loved by many people and are a way to make use of those green tomatoes that are always plentiful. Green tomatoes can also be frozen for winter use.
Slice your green tomatoes thinly as they will cook quicker and taste better. Lay them on cookie sheets and put them in the freezer until frozen. When frozen take them out of the freezer and transfer them to freezer bags. This method prevents them from sticking together and making a mushy mess when thawed. When you are craving fried green tomatoes this winter thaw a bag and fry away.
Now you can enjoy delicious fresh garden tomatoes all winter long.
