Here is how you can freeze stuffed green, yellow and red peppers. For this article, we'll use green peppers as the example. The same freezing method goes for stuffed red and yellow peppers. Freeze as many peppers as you'd like. Just make sure you have enough room in your freezer before you get started.
Prepare the stuffed peppers. After you've made your stuffed green peppers, you're ready to freeze your dish. You do not have to cook the stuffed green peppers beforehand, unless you feel more comfortable with having the meat inside already cooked. If you've followed traditional stuffed green pepper recipes, it most likely includes a mixture of ground meat and rice. All of these ingredients freeze well.
Wrap the stuffed green peppers to freeze. You can use saran wrap to wrap up your stuffed green peppers. After you've wrapped them up in saran wrap, place each stuffed pepper into plastic freezer storage bags. Ziploc is one company that makes a good brand of freezer storage bags you can use to freeze your peppers.
Alternately, you can also freeze the stuffed green peppers on wax paper. This will allow the stuffed green peppers to set. If you have a vacuum sealer, you can seal the stuffed green pepper in a freezer storage bag. The vacuum sealer sucks out air and allows the peppers to stay fresh as they freeze. Be careful with the vacuum sealer so you don't smash the peppers before storing in the freezer.
Use the frozen stuffed green peppers. Don't leave your frozen stuffed green peppers in the freezer for too long. Because the frozen peppers are stuffed with meat, you won't want to go longer than a few months before cooking the stuffed peppers. This helps ensure that the stuffed peppers will be fresh and delicious tasting.
When you're ready to heat your frozen stuffed green peppers, place some tomato sauce on the bottom of a casserole dish. Put the peppers in the dish. Pour sauce over the frozen stuffed green peppers. Place in the oven and heat until they are done cooking. If you've frozen the stuffed green peppers with a raw mixture of meat and rice, then you'll want to cook them longer than if you've already cooked the peppers before you froze them.
