3-4 lbs chicken
2 cups breadcrumbs, seasoned or plain
1/4 cup cooking oil
2 eggs 2 eggs

Clean the Chicken inside and out and Season
Remove all the fat inside and any feathers left on the skin. Season with salt and pepper and any other seasoning you prefer.2
Prepare for Frying
Place the cleaned chicken on a cutting board. Cut off the chicken parts and place on paper towels to keep from dripping. Cut the breast in half. Cut off any other large chicken pieces, the wings and drumsticks.Set aside on dry sheet of paper towel. Beat the eggs until foamy.3
Dip Chicken Parts into Eggs and Breadcrumbs
Dip each chicken part into the eggs and bread crumbs. Cover top and bottom and sides completely. Set aside on a plate or clean paper towels.4
Heat Oil
In the meantime place oil into a large size frying pan and allow to get really hot. Turn down the heat and carefully place each chicken part into the oil.5
Fry until the chicken skin is completely fried and crisp. Set on a clean serving platter.Tip
Turn the heat down on the stove when you place the chicken in to fry. Keep your face away from the pot. The hot oil sizzles and can burn you.
