Fried Rice Cakes
Ingredients:
3 cups fully cooked and chilled rice
¾ cup French Onion chip dip (Sub Plain Yogurt and chives)
2 Tablespoons Worcestershire sauce
1+ cup fine chopped, cooked meat (Chicken, ham, tuna, venison, etc)
2 large chicken eggs
2 cups grated cheese 8oz (Your Favorite)
1 cup seasoned flour (Flour, salt, pepper, garlic powder)
Directions:
Mix rice, French Onion dip, Worcestershire sauce, meat, eggs, and cheese. Cover and chill 2 hours or overnight. Preheat oven 425. Using a dipper make the rice mixture into golf ball size balls. (Hint keep your dipper and hands wet) Roll the balls in seasoned flour. Place on sprayed cookie sheets. Do not crowd, you will need two cookie sheets.(this recipe makes about 24) Using a fork press balls to about ½ " thick patty. Bake 25-30 min or till top is golden brown.
Notes:
We have Chinese carry out 2-3 times a month. I saved the leftover rice from these meals (yes you can use fried rice in place of the plain rice) in a zip bag till I had accumulated 3 cups. These do freeze and reheat well. I also like them room temp. I serve 2 per person for an appetizer. Just like the old chip ad "Becha can't eat just one."I serve 4-6 per person with green veggie and salad for a meal. I'll admit I have also bought rice from the Chinese restaurant and some boiled ham from the deli to make this in a hurry.
