The mayonnaise is made entirely from extra virgin olive oil and is much heavier and less digestible. This recipe adds a small quantity of rich oil to a regular mayonnaise, making it more palatable to our taste. You can use this sauce as a garnish for raw or cooked vegetables, grilled fish, or roasted meats.
Things You Will Need -
1 tablespoon very finely minced garlic ( preferably mashed to a taste with a mortar and pestle)
1 cup mayonnaise
3 to 4 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1/8 teaspoon ground cayenne
Method -
Whisk the garlic into the mayonnaise.
Whisk in the olive oil, lemon juice, and cayenne. Refrigerate until needed.
