How to Make Good BBQ Ribs

BBQ Rids are a Summer favorite with many folks. The recipes for "Great BBQ Ribs" vary from region to region and from BBQ Pit Master to BBQ Pit Master. All the research I have done to date has given me a few facts. The quality of the BBQ rib begins with the quality of the hog. The next important issue is proper handling and preparation. Y'all know what you like so think of that when some person is expounding on "the greatest BBQ Ribs I've ever tasted!" Good BBQ ribs take time. This process I'm sharing today takes parts of two days but delivers some great eating. I admit to stealing this recipe from an ancient BBQ Pit Master who wishes to remain anonymous. (He fears for his life for sharing this famly BBQ recipe with me) Everyone needs to roll up their sleeves, take off their rings, wash their hands and let's get cooking.

Bubba's BBQ Ribs

Ingredients

4 pounds baby back ribs (Your favorite style ribs)

1 stick butter (Real butter is better)

1 cup Worcestershire sauce

2 Tablespoons black strap molasses

½ cup creamy peanut butter (Your Favorite)

¼ cup lemon juice (Green Bottle stuff)

½ cup Kosher salt

½ cup garlic powder (Not Garlic Salt)

¼ cup ground black pepper

2 Tablespoon Ground Ginger

2 Tablespoons Ground Nutmeg

Directions

Day One: On Med-High heat in a heavy bottom skillet melt butter add Worcestershire sauce,peanut butter, molasses, and lemon juice. Stir till boils and lower heat to simmer 15 min (texture should be like thick BBQ sauce). Allow to cool 15 min before using. In a small bowl mix salt, black pepper, garlic powder, ground ginger and ground nutmeg and set aside. Place ribs on a double layer of heavy duty foil. Massage spice mix into ribs make sure to cover all areas well. Pour ¼ BBQ basting sauce on top, wrap tight, place in a dish and refrigerate 8 hours or overnight. Cover BBQ basting sauce and refrigerate. Day Two Preheat grill to Med-High. Place foil wrapped BBQ Ribs on grill for 1 hour turning every 15min. After one hour unwrap BBQ Ribs and place directly on grill grate for 30 min. Turning frequently and anointing with reserved BBQ basting sauce.

Notes:

I have used this with chicken thighs and it is just as good. Mom used to serve a warm wet wash cloth for each person when she fixed BBQ...I think it is perfect idea with these BBQ Ribs.
