How To Make a Gorgeous Goji Berry Veggie Salad

Goji Berries in Your Salad is a Great Health Choice

Goji Berries have been in Tibetan medicine for a few thousand years; mostly they used them in a healing soup to ward off colds. But the Goji berry can be added to salads to make a great combination of healing and decorative colour.

This is a quick and delicious salad for two that is high in Vitamin C and low in fat. If you want to serve it to more people just double the items in the salad.

First you must have a nice big salad bowl. I always choose a glass bowl, which will keep my salad cold in the refrigerator. Plus, the glass lets you enjoy all the colours in this healthy and tasty salad.

Your ingredients include one large granny smith apple, one large carrot, half of a red sweet pepper and half of a green or yellow pepper, and one quarter of a head of iceberg lettuce. You will also need a quarter of a cup of goji berries and some lemon juice and water. Your spices include thyme, salt, pepper, and your topping includes sunflower seeds and some flax seeds.

First you must soak your goji berries in lemon juice and water over night. Mix half your lemon juice with half water and just cover the berries and put them in the fridge. In the morning - they will have absorbed the juice and look plump.

In your big glass bowl, peel and cut your granny smith apple into chunks. Then with a grater, shred your carrot and place in bowl with apple. Chop your peppers and add to the mix. Now, add a good splash of lemon juice over everything to keep it from going brown around the edges. Then toss in your goji berries and toss up the mixture.

Just before you serve yourself - or your guests - tear up some iceberg lettuce and line a small or medium sized bowl with it. Now add your spices, sunflower seeds and your milled flax seeds to your salad mix - and toss it before placing it on the lettuce.

Your family and friends will enjoy the bright and exotic flavour of the goji berries in combination with the apples and peppers. You can also punch up your salad with slices of orange in the mix, and if you want to add dill as a spice - go right ahead. I also add cashew nuts sometimes and crushed walnuts too for a boost of Omega 3. It is also great with a protein plus of white pre-soaked navy beans or pre-soaked chickpeas!
