How to Make Great Vegan Creamy Mashed Potatoes
Heart Healthy Mashed Potatoes You Can Skip the Butter and Milk! Easy and Delicious
When I was vegan I had to learn to adjust my cooking to make old recipes a new way. I had to read labels of everything to look for hidden words like "whey" or anything that indicated it was some kind of animal product. This was no easy task for someone not use tp reading all the long words in the fine print of products. I can't even begin to tell you how hard it was to find a bread to eat that was vegan! That said, through all this label reading I was surprised to learn that some things you would think were meat flavored or an animal product actually were vegan! Case in point, ramen noodles. Ramen noodles come in many flavors. They have a seasoning packet. You have to read all the ingredients on the ramen noodle package and you will see that some flavors you think are an animal product because it make say shrimp flavored, or beef or whatever, well some of these flavors were vegan! You won't know which ones though until you read the complete label. You might think oriental flavor is vegan or vegetarian but you might learn it actually has beef flavoring. But you might be surprised to learn ham broth has nothing to do with ham or animal products at all. You might find that shrimp or lime shrimp chili flavor ramen noodles has no meat products and is completely vegan. My suggestion is when you have some time on your hands and a little memo pad and a pen, head to the grocery store and start reading those ramen noodle packages and you will know which flavors are vegan. Once you know, you can use those season packets for your vegan cooking.
You only need 3 ingredients
potatoes
water
and a vegan flavored seasoning packet from ramen noodles
You can mash potatoes by hand or with an electric hand mixer. I prefer the electric handmixer because it makes them their maximum fluffiness.
Be aware that the season packet can be high in sodium, however the more potatoes you use, or water, you are lowering the sodium per serving. Or of course you can also opt to use a low sodium season packet or just use less than what is in a packet
The uncooked ramen noodles you can save in a food storage bag for future use in another recipe such as stir fry or home made soup, so you don't need to waste the noodles.
How to make Creamy Vegan Mashed Potatoes:
Peel, and cut potatoes (you choose the amount you want to make)
make sure potatoes are covered in water in proper size pot
Bring potatoes to a rolling boil, then lower heat and cover and continue cooking until potatoes are soft and break with a fork (about 20 minutes over medium low heat)
Remove pot from stove and begin pouring potatoes into a colander to drain, however be sure not to drain all the water. Reserve at least 2 cups of the hot liquid which will be used for mashing the potatoes. If you like your mashed potatoes thinner then reserve more water. If you like them thicker than reserve less. You will get a feel for how much water to reserve after making them one time. To be safe you can just save the hot liquid in a separate bowl placed under neath the colander and then just add to the mashing process as needed.
Pour the drained potatoes in mixing bowl. Open vegan season packet and sprinkle over potatoes. Add 2 cups of hot water the potatoes cooked in and pour over the potatoes and begin mashing or mixing until smooth and creamy. The result is tasty and seasoned creamy vegan mashed potatoes! You don't have to be vegan to enjoy vegan mashed potatoes!
