How to Make Green Mini Frittatas

Enhanced with a Green Fruit and Cottage Cheese Salad

The current political excitement is think green. I suppose there are many green ideas that cross your mind. I think of green food ideas that are simple and easy to prepare. This simple recipe is great to feed a gang or just two with leftovers for a green lunch. The flavors are simple and robust. Y'all join me and roll up your sleeves, take off your rings , wash your hands and get cooking.

Green Mini Frittatas

Ingredients:

1- 15oz can spinach drained and chopped

1- 4oz can mushroom stems and pieces drained and chopped

½ cup French onion chip dip (comercial or homemade)

4oz smoked chopped meat (you choose pastrami, turkey, ham, etc)

8 whole large eggs

½ cup grated mozzarella cheese (or your favorite cheese)

Directions:

Preheat oven to 375. Spray muffin pan with vegetable spray and set aside. In a large bowl whip eggs and French Onion dip till fully incorporated. Fold in chopped smoked meat, chopped spinach, chopped mushrooms, and grated cheese. Fill muffin cups about ¾ full and bake 12-15 min. cool in pan 5 min then loosen with rubber spatula before removing to plate. Be patient it is worth the wait.

Note:

These are great warm or room temp. They do make an interesting cold lunch or snack the next day. I like to serve the green fruit salad with this to brighten the table.

Green Fruit and Cottage Cheese Salad

Ingredients:

24oz carton small curd cottage cheese (Your favorite)

15oz can Tropical Mixed Fruit with juices

8 serving size sugar free Lime Jell-O (Generic works well)

Directions:

Mix it, chill it, serve it

Note:

This too is great for the lunch or snack the next day. I like to serve this on a bed of lettuce enhanced with a dollop of whipped topping and a green olive.

These recipes are older than most of you folks reading them. My Mom borrowed them from someone and passed them on to me. I suspect they are from one of the many church cook books she collected. I know they are perfect for a lazy Sunday brunch, a bridal shower, or just a late night candle light supper. The first time I packed the Queen Goddess lunch with both of these recipes the Gals at work turned green with envy.
