• 15 skewers
• 3 lemons or lemon juice
• 2 Tbsp. olive oil
• 4 Tbsp fresh dill
• 2/14 lbs. peeled and cleaned large shrimp
• 2 lbs scallops
• vegetables of choice
• black pepper
• salt
Cooking time: On a hot grill maybe only 2 minutes on each side. Test because each grill is different.
1. Heat the grill until it is hot. Season the fish while you are waiting for the grill to heat. Make sure that you wash the raw shrimp, and remove the black veins. Rinse the scallops as well, and allow them to dry on a paper towel prior to putting them on the hot grill.
2. Combine the lemon juice with the olive oil and the garlic and put it all in a mixing bowl. Lightly stir with a wooden or plastic mixing spoon to make certain that you combine the salt, pepper with the remainder of the seasonings. Add 2Tbs dill, 1/2 tsp of salt, 1/3 teaspoon black pepper and stir again until they are all well blended. Add the shrimp and scallops and use either your hands or a spoon, and gently coat and season the fish with the mixture.
3. Thread the scallops and shrimp alternating them on a skewer. Place them, spaced apart, onto the heated grill until they are opaque. Make sure you rotate the skewers to make sure the shrimp and scallops are cooked on each side. Do not allow them to overcook. Shrimp and scallops become rubbery if they cook too long and will be fit for the garbage disposal if they do.
4. Slice an Italian Bread in quarters and spread butter and garlic on top. Place on the barbecue grill to toast and serve as a side with the salad..
Place the grilled fish on a plate and place on the table. Serve with a side salad of potato salad, hot corn, a tossed salad with lettuce, tomatoes, onions, cucumbers or any other vegetables you prefer.
This is an easy to make enjoyable fish meal to be served in or out of doors.
