How to Grill Steak: Tips for Novice Grillers

Nothing says summer like the sight and sound of a delicious, thick and juicy steak on the grill. But for those novice grillers, getting that perfect 'just right' steak can be a daunting task. The concept of grilling is fairly easy, cooking the meat over a very hot temperature in a short amount of time.

The choice of beef chosen to grill is a personal preference. Some people prefer more expensive cuts of beef, like Filet Mignon, which is generally the most expensive cut. You could also choose the Rib eye steak, which is known for its marbled appearance which comes from the lines of fat running through the meat and works in cooking to tenderize the meat and leave you with a steak that's fall off the bone tender and delicious. A Sirloin is one of the less expensive, but just as delicious cuts of beef you could choose for grilling. It's usually a little less expensive because its considered a cheaper cut. Of course the better cuts of beef are always considered a better quality and will give you a somewhat better steak after grilling, but the majority of families cannot realistically afford to feed their families $20.00 steaks, unless it's a special occasion.

You really don't have to choose an expensive cut of beef to get a tender steak; cheaper cuts of beef can be just as delicious, its all in the way you cook it.

When choosing your steak for grilling, a choice cut of beef from your local supermarket or butcher is best, cuts from the tenderloin or rib are excellent. Make sure it has some fat in it, as this helps to tenderize the meat during cooking when the fat melts. Steaks that haven't been frozen are always best, so try to buy fresh steaks on the day you're going to cook them and keep in the refrigerator until about 30 minutes before putting on the grill. For less expensive cuts of beef like Flank or chuck, you may want to consider soaking a few hours in your favorite marinade of choice. The marinade works to tenderize the beef and give it that extra flavor. For choice cuts of beef its not recommended that you use marinade as this can ruin the meat. Before grilling make sure the steaks are at room temperature, as this gives them optimum flavor. Rub the meat with any fresh herbs of your choice, like garlic, cracked black pepper and salt.

Preheat your grill for 20 minutes if using gas, For charcoal you should make sure the coals are white and very hot before adding meat to the grill. You will need to pay close attention to whatever cooking method you are using. Be prepared to douse any flames that may flare up. Otherwise you could end up with a burnt steak. When grill is hot, add the steaks and cook on high for four minutes with the lid closed. The key to a great steak is the shortest cooking time over the highest heat possible, this cannot be stressed enough.

When the four minutes are up flip the steak using tongs. Never pierce the meat with a fork as this causes the juices to be lost. Grill the steak on the other side for an additional four minutes. It should be about medium rare depending on how thick the meat is. Remove the steak from the grill and allow to rest on a warm platter for about 5 minutes.
