How to Make Hangover Soup

Many years ago I like many folks celebrated with a chemical called Alcohol. When the celebrating was too much I needed to pay the fiddler the next day. Remember this time in my life I had no need to be aware of how much fat or salt I ate. Fat was flavor to me. New Years Day was always a party to watch football and heal from the celebrations of the night before. That is the history of this "Hangover Soup." Warning this is not a low calorie or a low fat soup. Mom would most likely add a pound of butter to enhance the flavor but I'll leave that up to you. Y'all best pour yourself a large spicy Bloody Mary, roll up your sleeves, take off your rings. wash your hands and we will begin cooking.

Hangover Soup

(aka Polish Good Luck Soup)

Ingredients:

1 pound your favorite smoked sausage diced

1 pound deli bacon diced

2 softball szed onions diced

1-2 green peppers seeded and diced

3-4 jalepeno peppers seeded and diced (optional)

2 cups diced celery

1-2 cups frozen peas

1 can 16oz Sauer Kraut rinsed and diced

1 can 8oz mushrooms stems and pieces drained

1 can 16oz diced tomatoes

1 can 16oz red beans rinsed

4-5 cups beef broth

1 large mug of Black Coffee

½ bottle red wine (optional)

1 Tablespoon Sea Salt

2 Tablespoons sweet paprika

2+ Tablespoons garlic powder

1 cup French onion chip dip

¼ cup cornstarch

Directions:

Into a large pot put sausage, bacon, onions, peppers, celery, frozen peas, sauer kraut, mushrooms, tomatoes, beans, beef broth, red wine, Sea Salt, paprika, garlic powder, and a cup of coffee. Bring to a rolling boil, reduce heat to a simmer for 1-2 hours. Put French onion dip, corn starch, and one cup of soup into a bowl and whisk together. Slowly add to simmering soup and stir till soup thick and bubbly.

Notes:

I didn't precook bacon just put it in the pot. Deli bacon is dryer than packaged bacon but either will work. I have replaced the red wine with Welch's concord grape juice. Easy way to dice smoked sausage is quarter it lengthwise, then slice it. Serve this with a spicy sub sandwich and an ice cold cole slaw. Remember this is soup not rocket science. If you choose to add or delete from this recipe it is your choice.
