Having a breakfast burrito does not mean your diet has to suffer. This filling breakfast burrito is suitable for low-fat and diabetic diets.

1 Whole Wheat Tortilla
3 Mushrooms
4 Egg Whites
1 TBS Salsa

Directions for How to Make a Healthy Breakfast Burrito for Diabetics

Heat a non-stick frying pan on medium heat.

Break four eggs and separate the yolks from the whites. Place the egg yolks in a separate bowl.

Chop mushrooms into small pieces.

Pour egg whites into the pan and stir until cooked thoroughly.

Add chopped mushrooms to the egg white mixture and season with Mrs Dash, a salt substitute, for added flavor.

Heat the whole wheat tortilla in a separate frying pan for one minute or cook in the microwave for 20 seconds (or until warm).

Remove the tortilla from the pan and place on a plate. Pour the egg white and mushroom mixture over the tortilla. Top with salsa, roll like a burrito and enjoy.
Tip
Use organic, free-range eggs.Add other vegetables to make the breakfast burrito more filling (e.g. spinach). Buy egg whites already separated from the grocery store so you can make your breakfast even quicker.
