How to Make a Healthy Spanish Rice Dish

When I was a little girl my mother used to make this really great spanish rice dish that I just loved. However, her version was not very healthy as it included white rice, and high fat ground beef. When I became an adult and began being interested in eating a healthier diet, I changed the recipe slightly and came up with a much healthier version that also just happened to taste better.

You need the following ingredients to make this spanish rice dish: 1 green bell pepper, 1 small onion, 3 cups of instant brown rice, ½ pound of lean ground beef, Nature's Seasons seasoning blend with no MSG for taste, 1 16 oz can of diced tomatoes in their own juice not stewed.

Instructions: Dice up the onion and green pepper, then put this along with the ground beef into a skillet to brown. Sprinkle some Nature's seasons on the mixture for taste. While the ground beef is browning, boil water for the rice and then follow the instructions on the box for making the rice. Keep stirring the meat mixture until it is cooked through. Once the rice is ready take it and the meat mixture along with your can of tomatoes and add all of it into one pan. Stir it all up and cook on medium heat for 30-45 minutes, stirring periodically and adding Nature's Seasons as needed for taste. I usually let it cook covered for about 10-15 minutes to begin with and then take the lid off and keep stirring it the last 15-30 minutes. How fast it cooks will depend on your stove.

Once the dish is heated clear through and the tomatoes have cooked down, your spanish rice is ready for consumption! I hope you enjoy this modified version of one of my favorite recipes as much as I and my family do.
