How to Make a Healthy Sunday Fried Chicken

Sunday has been traditional fried chicken day in many homes. We all know of the negative concepts of frying food. It doesn't matter that we love it it's gonna kill us. I think I have found an oven fried chicken recipe that is just a wee bit healthier but still tastes great. To quote my grandson Jacob Mathew "If the Colonel would have your chicken recipe he would be a General by now." Well Jake is almost three and very wise but I think his Mom prompted that remark. If you're looking at the picture of the Wetzel Clan, Jake is the little one in the middle. Now let's roll up our sleeves, take off our rings, wash our hands and get cooking.

Jake's New Sunday Chicken

Ingredients:

6-8 chicken thighs (I like boneless skinless but either will work)

¼ cup honey (your favorite)

6-8 cloves garlic chopped (more if you dare)

2 teaspoon ground sage (optional)

2 teaspoon Sea Salt

½ teaspoon black peeper (fresh ground is best)

1+ cup seasoned flour (flour salt, peeper, sweet paprika)

cooking spray ( I like butter flavor)

Directions:

Wash and pat chicken dry. In a zip bag place buttermilk, honey, garlic, sage, salt and peeper mix well (squish squish) add chicken and press as much air out as possible, seal and refrigerate 24 hours. Turn the bag over a few times during the 24 hour period. Preheat oven to 400. spray baking sheet with cooking spray, dredge chicken in seasoned flour and place on baking sheet. Place in oven for 45-55 min. or till brown and juices run clear.

Notes:

The Queen Goddess like whipped potatoes, stuffing, buttered noodles, and gravy with this chicken. I try to add a green vegetable. Since the oven is already on why not try some roasted Asparagus or Green Beans. The method is the same for both. Just drizzle a little olive oil over the vegetable on a baking sheet, season with salt, pepper and garlic powder, and bake for 20-25 min.

Jake's Mom, Punky also reminds me a whole cut up chicken will work.

OK the recipe is now yours. Make it Sunday. Don't wanna wait it is a great Monday chicken dish too. The chicken is great cold with a little potato salad and perhaps some Dean Martin in the CD player and candle light. Bow you head and thank God for all your blessings and enjoy... Mizpah ;-}}>
