Ingredients
To make homemade honey mustard chicken, you must first gather a few simple ingredients. You will need one boneless skinless chicken breast per person being served, plus any you wish for leftovers. For the sauce you will need 1/2 cup honey per chicken breast, 1/2 cup yellow mustard per chicken breast, and 1/2 teaspoon curry powder per chicken breast.
Grocery Store Shopping Versus What is On Hand
The chicken breasts themselves will most likely be the most expensive portion of this meal, although many families already budget for boneless skinless varieties in their weekly grocery allowance. Curry powder and honey are most likely already in your spice cabinet, but if not expect to make the investment. Curry powder lasts a long time and can be used in a variety of different recipes. Honey is great to have on hand for tea or adding to peanut butter sandwiches.
Procedure
Preheat your oven to 375 degrees. Coat a glass baking dish with Pam or another non-stick spray. In a large bowl, combine the honey, mustard, and curry powder. Place the bowl in the microwave for about a minute, or until the honey has liquefied. Mix the sauce together well with a wire whisk. Place each chicken breast flat in the glass baking dish. Pour the honey mustard and curry mixture over the chicken breasts until each is coated. Bake the honey mustard chicken for thirty to forty minutes, or until it is no longer pink inside.
Make It a Meal Serving Suggestions
This is a great family dinner idea, which can be easily made into an entire meal. Serve with a bright green vegetable (peas, broccoli, green beans, etc.) or a tossed salad, plus a dinner roll or slice of homemade whole wheat bread. As for leftovers, this baked honey mustard chicken makes great sandwiches -- either using a whole chicken breast or chopping up the chicken for a honey mustard chicken salad. (In our household, I mix a cup of mayo with the chopped honey mustard chicken and serve of sandwich rolls for lunch the next day.)
