This recipe may be a bit sweet for some, but you can easily adjust the brown sugar and vinegar amounts to suit your tastes.
This Ketchup Recipe yields approximately one bottle of ketchup.
Home-made Ketchup Recipe
4 lbs Tomatoes
1 1/2 cup Brown Sugar
3 Cloves Garlic
1 tsp. Salt
1 stick Cinnamon
1/2 tsp. Pepper
1/2 tsp. Cayenne Pepper
1 cup Cider Vinegar
1/2 tsp. All Spice
2 tbls. Corn Starch
1. Coarsely chop tomatoes in a food processor.
2. Combine all ingredients except the corn starch in a large sauce pan.
3. Simmer on medium heat for 30 minutes.
4. Let cool for a few minutes and drain through a sieve into a bowl. Push firmly on tomatoes to squeeze as much tomato juice through as possible this will become your ketchup.
5. Pour ketchup in the bowl into a smaller sauce pan.
6. Reheat ketchup to a simmer then add corn starch, and continue to simmer 10 mins.
7. Allow ketchup to cool to room temperature then bottle.
