How to Make Homemade Potato Chips

You'll Never Buy Bagged Chips Again!

First you need to get all your ingredients together and prep them. This makes cooking time a lot faster, and cleaning time a snap!

Ingredients needed :

Potatoes
Peanut Oil
Frying Pan or Deep Fryer
Salt
Mandolin (hand held slicer)
Large bowl
Water / Lemon
Hand towel

Get your large bowl and fill it with cold water. Add 1/3 of a cup of lemon or lime to the water and mix well. This will be for your potatoes to go in once you have sliced them. The lemon/lime is for the potatoes to stay white and not turn brown. Place bowl aside until needed.

You can either peel your potatoes or leave the skin on, all depends on your taste and if the skin does not bother you. I prefer the skins to be left on the potatoes, gives it an extra crunch and texture.

Turn your fryer on, or pour the peanut oil in a large frying pan and turn on medium high. Allow the oil to heat while you are preparing your potato chips.

Take your potatoes peeled or not and place them on the mandolin. Be sure when holding the potatoes that you keep your fingers towards the palm of your hand so you do not slice your fingers. Run the potato down the mandolin until you are almost down to the end of the potato. Once you are at that point, toss the potato in a separate bowl and use for something else. Place the raw potato chips in the water and lemon until you are finished with the rest.

Repeat process until the you have the amount of potato chips you prefer. Drain the potatoes in a strainer and allow all the excess water to come off. Place strained potatoes on a hand towel and pat the potatoes as dry as you possibly can (NEVER put wet potatoes into hot oil).

Grab about 15 sliced potatoes and place them into the oil. Be sure to turn them every minute or so, otherwise they will brown to quickly on one side. Once the potatoes have turned a golden brown, take them out of the oil and place on a paper towel to drain. While on the paper towel, be sure to salt the potato chips to taste. Waiting to salt them after you cook all of them will not allow the salt to stick.

Allow to cool for a few minutes and there you have it, homemade potato chips !

You can use this recipe on sweet potatoes as well. Cooking time on sweet potatoes are much quicker, so be careful.

    Great Recipe! I found an exceptional way to make potato chips, they call it "Potato Chip on a Stick" in Korea, I have just bought the slicer machine, you can slice the potato in spiral on a wood skewer, is really amazing, you can see how it work at http://www.youtube.com/watch?v=KD1WBAqT6Ko. A totally different way to make your own potato chips at home, you can make banana chips as well, my kid loves it. ;-)
