How to Make Homemade Rice a Roni

As a child I loved the flavor and texture of Rice Roni (The San Fransisco treat). As I became more mature and had some issues with prepared food items Rice A Roni left my food choices. This week I was having one of those memories that brought some intuitive thinking and a new recipe for us all to enjoy. Homemade Rice A Roni we'll call it Bubbaroni to avoid any trademark problems. The best part I can pronounce and know every ingredient. Someone please put a fresh pot of Columbian Coffee on to perk. We're all gonna roll up our sleeves, take off our rings, wash our hands, and get cooking Bubbaroni.

Bubbaroni

Ingredients:

2 Tablespoons olive oil (Your favorite fat)

½ Cup broken pasta (I break Fettucini into ½"-1" pieces)

½ Cup chopped celery

½ Cup chopped bell pepper (Green or red)

½ Cup fine chopped onion

2-3 Tablespoons fine chopped garlic

4oz can mushroom stems and pieces drained and rinsed

2 Cups low sodium Beef Broth (Your favorite broth)

1 Tablespoon low sodium Worcestershire sauce

1 Tablespoon kitchen bouquet

2 cups grated white cheese (Optional)

Directions:

Place oil in a heavy bottom pan with lid heat over Med-High, add veggies and saute till limp, add pasta and rice saute till you have a nutty aroma and oil covers the rice and pasta. Add low sodium beef broth, low sodium Worcestershire sauce and kitchen bouquet stir until comes to a rolling boil. Cover and lower heat to a simmer. Do not peek for 25 min. Stir in optional grated cheese and serve.

Note:

This recipe does double for a gang. If you don't care for mushrooms replace them with ½ Cup frozen peas. This does reheat well and just like Chili it does taste better the 2nd day. I have been known to add this to a hot sandwich for a great enhancement to lunch. I'll admit the cheese was incorporated for the grandkids... They will eat anything that has enough cheese on it.
