How to Make an IRISH COFFEE

Nothing is better than an Irish Coffee on a wet or cold day. Irish Coffee was first invented in the 1930's - 1940's in a small town called Foynes, a port town in the south-west of Ireland. Foynes was a major transfer point between the United States and Europe for passengers flying. The often very bumpy ride took up to eighteen hours to cross the Atlantic Ocean.

In 1942, in the Foynes Terminal Restaurant, the caterers who were managed by Brendan O'Regan and the Chef, Joe Sheridan, realizing that the passengers were cold and exhausted, made a drink which would warm the up. The Irish Coffee was born and in 1952 Joe Sheridan visited the Buena Vista Cafe in San Francisco and introduced the first Irish Coffee's to the United States.

INGREDIENTS:

- Coffee

- Brown Sugar - 2 teaspoons

- Irish Whiskey - 2/3 very large spoonfulls (or more if you like)

- Whipped Cream

Use a glass that can take hot liquid and rinse with boiling water so that it is warm, put a teaspoon of Coffee into the glass (how much depends on your particular requirements), put two full teaspoons of brown sugar into the glass (white sugar is ok), add two to three very large spoons of Irish Whiskey (Jameson, Bushmills, Paddy or Powers Gold Label) into the glass. Fill 75% of the glass with boiling water stirring constantly and then gently pour freshly whipped cream onto the top and do not mix. Voila, an Irish Coffee.
