How to Make Jamaican Jerked Chicken

What you will need to make this delicious, Jamaican Jerk Chicken, Jamaican Style is: 1 cup of thinly sliced fresh ginger, 1/2 cup of chopped fresh garlic, 3 green onions, trimmed and cut into about 2 inches, 1 cup of freshly squeezed lime juice, 11/2 cups of soy sauce, 2 jalapeno peppers, seeded, 1 cup of apple cider vinegar, 1/2 cup of dark brown sugar,you can add just a little bit more if you like, 1/2 cup of Crisco Oil, 2 teaspoons of cinnamon, 1/3 cups of all spice, can add a pinch more if you like, 2 tablespoons of molasses try to use the light, 1 teaspoon of black pepper, 1/2 teaspoon of ground cloves, 1/2 teaspoon of ground nutmeg, 2 teaspoons of freshly chopped thyme, can also use ( 1 teaspoon of dried), if you are making this dish for your family you will need about 13 to 14 thighs or middle thighs (about 6 pounds) with skin removed, you can add more chicken if you like or less depending on the size of your family, or if you're only cooking for a family of three, you'll probably only need 5 to 6 pieces of chicken. To make the Jamaican Jerked Chicken follow these steps below.

1.) Place the soy sauce, lime juice, ginger, garlic, onions and peppers in a food processor bowl. Puree until smooth.

2.) Transfer to mixing bowl. Stir in vinegar, brown sugar, Crisco oil, all spice, molasses, cinnamon, thyme, black pepper, nutmeg and cloves. Let stand for 30 minutes.

3.) Taste the seasonings with soy sauce, lime juice, and brown sugar. Marinade should be spicy, gingery and slightly sweet and sour.

4.) Place chicken in a large heavy zip lock or resealable plastic bag, if you don't have this type of bag use a plastic grocery bag. Pour marinade over the Jamaican Jerk Chicken, than seal bag. Refrigerate for two days, turn bag over occasionally, shaking it up and down. Now this is a dish where you need to prepare two days ahead of time, for instant, if you want to cook this dish on Friday, you must prepare on Wednesday.

5.) Remove chicken from marinade, it's ready for the Grill or broiler making sure you turn frequently to avoid burning.

6.) It is OK, to char just a little bit because you want it to have a kind of char, dark, but not burned look to it when you're done cooking the chicken.

The calories are low for this type of dish, because you're grilling or broiling the chicken opposed to frying it. You can serve the Jerk Chicken with a salad, or mashed potatoes, green beans, corn whichever side dish you like will go great with this Jamaican dish. Jerked chicken is another way of preparing your chicken. This is a great dish for the summer during barbecuing season, or just broiled if you're unable to grill it.
