If you are a chef you must know how to cook fish. Many don't.
If you catch fish you must clean fish. If you want to clean fish you must kill fish. This is the happy circle of life.
Keep your catch stress free in well aired water for not too long. Kill the fish by severing the spine just behind the head put another notch in the spine just above the base of the tail. Lay the dead fish out in cool salt water for an hour before cleaning.
This is the process for any size fish.
I urge you to cook fish quickly, directly and with little embellishment.
