Red Flying Dragon
Level - Second Level of Boletarian Palace
Rewards - Small Flame Scale Demon's Souls
Strategy: Although you will first encounter the Red Flying Dragon in the first level of Boletarian Palace, you can't actually hurt him until the second level in that particular area. Before entering the level, make sure to bring a bow in addition to around 200 arrows just to be safe.
After the first area, you will find the Red Flying Dragon swooping around the bridge in an endless loop. If you ran immediately all the way to the tower after he passes by with his flames, you can avoid his attack. Instead of continuing to the next area, climb to the top of the first tower and eliminate the enemies along the way. Once you clear the area, look back at the bridge you just passed through. You will see the Red Flying Dragon still swooping the area with flames in an endless loop. This time, you will be safe from his attacks.
Equip your bow and arrows to manually shoot the Red Flying Dragon as he continuously flyby. If you place your crosshairs on the right spot, you can shoot two arrows every time he passes. Continually fire at the dragon and he will eventually go down after about 100 direct hits with your arrows. If you decide to kill the Red Flying Dragon later, you can use the Poison Cloud magic attack to speed up the process.
Blue Flying Dragon
Level - Fourth Level of Boletarian Palace
Rewards - Large Flame Scale Demon's Soul and Flying Dragon's Bronze Trophy
Strategy: Just like the Red Flying Dragon, the Blue Flying Dragon will appear on the first level of Boletarian Palace. You can't actually hurt him until much later in the game when the fourth level of Boletarian Palace. By then, you should have an upgraded bow as well as more powerful arrows. Before tackling the Blue Flying Dragon, make sure to bring around 400 - 500 heavy arrows.
The Blue Flying Dragon will first appear in the middle on the short level. After the cut scene, simply stay where you are and start shooting arrows into him. Once you reduce his HP to half, the Blue Flying Dragon will fly away.
Continue into the level until you encounter the annoying enemy one last time. The Blue Flying Dragon will start spraying his flame attack in a zigzag motion. Make sure you are wearing light armor so that you can run fast. Go to the right edge of the staircase and try to get as close to the top as possible while still being out of the range of the devastating flame attack. Once you see the flames move from right to left, immediately run to the top. If you are quick enough, you should be able to get past it without being hit.
Now before moving on, go back outside and position yourself directly beneath the Blue Flying Dragon so that he won't be able to hurt you with his flames. Press R3 to lock-on to the target even though you can't see it. Equip your bow and start firing. As long as you see your character shooting upwards and constantly adjusting his or her aim than that means you are damaging the Blue Flying Dragon. Eventually, this optional boss will go down for good.
