Ingredients

Serves 6
2 Chinese cabbages or napa cabbage
1 1/4 cup salt
1 medium white radish
1/2 cup red pepper powder
2 teaspoon fresh ginger, finely chopped
1/3 cup salted baby shrimp
1 cup small green thread onions of chives, cut in 1 inch lengths
1 cup minari (watercress) stems, cut in 1 inch pieces
1 head garlic, finely chopped
1/4 cup very thin onion, cut in 1 inch lengths
1/3 lb fresh oyster
1 red pepper threads

Directions for How to Make Kimchi?

Cut each cabbage in half lengthwise.

Make a brine with 10 cups water and 1 cup salt and soak the cabbage section in brine.

When the cabbages are well-salted, rinse thoroughly in cold water and drain.

Cute one-third of the radish into thin strips.

Mix the red pepper powder well with the salted shrimp juice. Add the mixture to the radish strip and mix well until the reddish colour is set. Then add the remaining ingredients. Season with salt

Pack the seasoned mixture between each leaf of the wilted cabbage. Cut the remaining radish into large pieces and mix it with the seasoned mixture.

Place the stuffed cabbages and radish pieces in a large crock.
