How to Use Up Leftover Pina Colada Drink Mix

Now that the holiday parties are over, you may have some Pina Colada drink mix in the refrigerator. Check the label directions for specifics, but it may only keep up to a month after it's been opened. "Pina Colada" literally means "strained pineapple" in Spanish, according to merriam-webster.com. 1. Pina Colada Milk Shakes
A middle-aged man with a gray bushy mustache and ponytail to match stopped me in the grocery story recently. He was desperately searching for the maraschino cherries. He had promised his daughters he'd make them Pina Colada Milkshakes. I pointed him to the cherries, and the kind man gave me his recipe:

Place 1 pint vanilla ice cream and 3/4 of a cup (more or less depending how thick you like yours) of Pina Colada drink mix in a blender. Blend it until it's smooth. Pour it into glasses. Add a dollop of whipped cream to each glass and put a maraschino cherry on top.

2. Pina Colada-Flavored Coffee
Use up leftover Pina Colada drink mix in your coffee. Pour in two or three teaspoons of the mix and add a teaspoon of coffee creamer. (More or less, depending on how strong you like it.) Stir it well and enjoy. I haven't tried it, but I bet adding real cream would make this flavored coffee taste even better.

3. Fruity Pina Colada Smoothie
My friend Jan is a social butterfly who frequently hosts parties. Instead of drinking Pina Coladas, she loves to turn them into healthy fruit smoothies. She says this recipe is a refreshing way to start the day:

Pour a cup of Pina Colada drink mix in a blender container. Add a half cup of crushed ice and a banana. Blend the three ingredients until they are just slushy. Add one cup of crushed pineapple and a cup of coconut. Blend until smooth, then pour it into a tall glass.
