"How Do You like 'Em Apples?" Apple Pie

The Ultimate Apple Pie

This recipe is a perfect combination of sweetness and tartness due to the different apples that are used in the making of the pie. This pie will impress your guests, and the fool-proof pie will have your guests betting that it was bought at a bakery!
Perfect for Thanksgiving!!!

Apple Pie Crust Ingrediants

2 cups all-purpose flour

1 tsp salt

¾ cup shortening

4 tbsp cold water

Apple Pie Filling Ingredients:

2 cups Granny Smith Apples peeled and thinly sliced

2 cups Fiji Apples peeled and thinly sliced

3 cups Delicious Apples peeled and thinly sliced

2 tbsp lemon juice

½ cup white sugar

½ cup brown sugar

¼ cup all-purpose flour

1 tsp ground cinnamon

¼ tsp ground nutmeg

2 tbsp butter, softened almost to point of melted

1 egg yolk

1 tbsp water

Coarse White Sugar

Directions for "How do you like 'em Apples?" Pie Crust

In a large bowl, combine the flour and the salt and then cut in the shortening.

1 tbsp at a time, add the cold water, using a fork to toss the dough until it forms a ball.

Place dough in refrigerator for 30 minutes, or until chilled.

Roll out half of the dough onto a floured surface into a 10-inch circle and loosely place into a 9-inch pie pan.

Directions for Apple Pie Filling:

In a large bowl, toss the apples with the lemon juice. Combine the white and brown sugar, flour, cinnamon, salt and nutmeg. Toss with the apples.

Pour the apple mixture into the crust and place top with bits of the butter.

Roll out the remaining dough to fit the top of the pie and place on top of the apple/butter mixture. Cut slits in the top to allow steam to escape. (It is okay to overstuff the pie a little bit, but don't get crazy!)

Seal and pinch the edges.

Beat the egg yolk and water and with a pastry brush, brush over the top of the pastry. Sprinkle the coarse white sugar on top.

Bake at 425F, for 15 minutes.

Reduce heat to 350F, bake for a remaining 40-45 minutes or until the filling is bubbly and the crust is golden.
