How to Make Low Fat Fudgey Brownies

Y'all know of my love for simple recipes that taste great. Most times when I receive a recipe the very first thing that goes through my mind is how I can pump up the flavor or make it more simple to assemble. I received this recipe from my "Real Estate Angel" and it doesn't need any enhancements from me. The fact that it is double chocolate doesn't effect my opinion of the recipe either. Y'all know it's time to roll up our sleeves, take off our rings, wash our hands and get cooking.

Low Fat Fudgey Brownies

Ingredients:

1 family size brownie mix

1 -4serving size instant chocolate pudding (Generic is OK)

1 can Hershey's chocolate syrup

8-10 oz California dried plums (aka prunes)

1 12oz bag chocolate chips (I prefer dark chocolate)

1 Cup chopped pecans (walnuts will work in a pinch)

Directions:

Preheat oven to 375. Spray 9 x 13 pan and set aside. Place dried plums and half the Hershey's chocolate syrup into food processor or blender. Pulse till you have a smooth puree. In a large bowl combine remaining Hershey's chocolate syrup, brownie mix, chocolate pudding and plum puree. Fold in pecans and chocolate chips press into prepared 9 x 13 pan. Bake for 30-45 mins until springs back with touch 2" from edge. Allow to cool before frosting and cutting.

Frosting

Ingredients:

8oz cream cheese room temp (low fat)

½ cup smooth peanut butter room temp (Crunchy is OK)

1 - 4 serving size instant chocolate or fudge pudding (Generic is OK)

1 pound powdered sugar

Directions:

Whip, with hand mixer, all ingredients together. If too thick for your liking add a bit of milk.

Notes:

These low fat fudgey brownies are great without the frosting but the enhancement is like the kiss on your wedding night. Beware!!! The first time I served these to the Queen Goddess she went into an amorous mood quicker then Neal Armstrong left the Earth on his way to the moon.
