How to Make Mexicali Fish

I have a dear friend that believes "the only way to eat cat fish is beer batter dipped and fried with hush puppies on the side. He won't admit to it but this recipe has given him a reason to think differently. I know he had three serving the night he ate here and demanded his wife get the recipe from me. This is a microwave recipe and I love the quickness of preparation. Y'all will need to roll up your sleeves, take off your rings, wash your hands so we can get cooking.

Mexicali Catfish Fillets

Ingredients:

6 Catfish Fillets

2-3 cups chunky salsa (use your favorite)

1 ½ cups Minute Rice

1 stick butter melted, divided (butter is better)

sea salt

black peeper

paprika

Directions:

In a microwave casserole place rice, half the butter and half the salsa, cover and cook on high 7-8 mins and stir half way.. Lay out fillets on counter, season with salt and peeper. Place 2 Tablespoons of rice mixture on top of each fillet. Roll thick end towards thin end and place seam side down on remaining rice mixture. Pour remaining butter over fillet rolls and sprinkle with paprika. Cover and cook on high 4 mins. Pour remaining salsa over all cover and microwave on high 90 seconds. Allow to stand five mins

Notes:

You may substitute most any firm fish. Trout, red fish, sea bass, etc.

The Queen Goddess thinks we need more greens in our diet so she will fix a crisp green salad to enhance this treat.

I have a friend that love beens more than I do. She stirs in one can of red beans with the rice in the first step. I suspect you will need to increase the cooking time but I haven't tried it myself.

This does feed four adults well. It also will reheat one time without any problems. Reheating more than once the fish gets tough.
