How to Make the Most of Your Thanksgiving Leftovers

If you are anything like me, I am sure that you have a lot of turkey left over from thanksgiving. More so, I am sure that you would not like for it to go to waste, and why should you. There are lots of great things that one can do with turkey leftovers. This includes everything from sandwiches to casseroles; yes, one can make a simple sandwich or even an elaborate dish, which can taste like a completely new dish.

Things You'll Need:

  • TURKEY SANDWICH:
  • Turkey slices
  • mayonnaise
  • romaine lettuce
  • tomato slices
  • 2 slices of bread
  • TURKEY BURGER:
  • burger buns
  • Velveeta cheese
  • 2 cups turkey cubes
  • 1 cup turkey stuffing
  • 1 boiled potato (mashed)
  • dash of salt
  • seasoning salt
  • 3 tablespoons olive oil
  • frying pan
  • small bowl
  • TURKEY CASSEROLE:
  • 2 1/2 cups macaroni pasta
  • 2 cups turkey cubes
  • 1 can cream of chicken soup
  • 1 cup half and half
  • 4 oz butter
  • 1/2 medium sized onion finely chopped.
  • 1/2 cup green peppers (chopped in cubes)
  • 3/4 cup mushrooms, chopped
  • 1 cup shredded cheddar cheese.
  • 1/2 tsp salt
  • large pan
  • wooden spoon
  • 3 quarts corning-ware casserole dish/ large baking pan

TURKEY SANDWICH:

The turkey sandwich can be made like any other sandwich. First spread mayonnaise on either side of the bread, layer the inside of the bread with a leaf of lettuce or two and a couple slices of tomato. Cut thin slices from the breast of the turkey and layer it on top of the lettuce and tomato. If you really like mayonnaise, then one can spread mayonnaise on the turkey slices or simply sprinkle salt and pepper on the turkey slices instead.


TURKEY BURGER:

1. Peel, chop potato into cubes and then boil in a small pot, unless there are leftovers. Once the potato is boiled, pour off water, add 1 tablespoon butter or margarine and mash using a small fork.

2. Then combine turkey cubes, 1 teaspoon seasoning salt, mashed potatoes and stuffing. Blend with hands until evenly blended. Then make 3 patties.

3. Preheat pan on medium heat and then add 3 tablespoons olive oil. Then flatten patties and place in frying pan and let fry for 3 to 4 minutes on either side. Melt a think slice of Velveeta cheese on top of burger, then remove from pan.

4. Dress the burger buns to your liking, then add turkey burger and enjoy!

TURKEY CASSEROLE:

1. In a large pan over medium-low heat melt 4 oz butter. Add 2 tablespoons flour and stir for 1 minute.

2. Then add finely chopped onions to pan a saute for approximately 5 minutes.

3. Now add 1 cup half and half, 1 can cream of mushroom soup and a teaspoon of salt. Then stir with a wooden spoon until smooth. Continue to stir constantly until the sauce boils and thickens.

4. Let it simmer for 2 minutes and then add cubed turkey breast or pieces to sauce (before mixing with the pasta). Allow turkey cubes to cook in sauce for approximately 8-10 minutes or until it thickens once more.

5. Cook macaroni pasta following directions on the package. After the pasta has cooked, pour off hot water and set aside.

6. Add 3/4 cup mushrooms, 2 cups mixed vegetables and 1/2 cup green peppers. Let it continue simmer for approximately 3-5 minutes. Then combine pasta to the chicken sauce mixture and stir until the sauce covers the pasta completely.

7. Preheat oven to 350 degrees. This should take approximately 5 minutes.

8. Finally transfer mixture to a deep baking pan or 3 quart square corning-ware casserole dish. Sprinkle shredded cheddar cheese on top of pasta mixture. Bake for 20 to 25 minutes or until the creamy sauce begins to bubble. This should serve 5 to 6. Bonne appetite!
