How to Make a No Potato Tater Salad

One of the challenges of renal failure is the need to change my diet. Tomatoes. Potatoes, and such are on a very limited basis because of their high Potassium and Phosphate levels. Now I love things like tater salad with brats for a home party or gathering. I have tried macaroni salad, cauliflower salad, bean salad, etc. and none of them fill my desire for that special taste of Tater Salad.

About 20 years ago there was a Cajun fella on PBS that was part comedian and part cook. I remember he made a no potato tater salad. I have no idea why he made it. I also remember he greeted everyone at the beginning of his show with "How Y'all are?" With that in mind I developed this unique recipe for No Potato Tater Salad. I've made a big pot of green tea to share. Let's roll up our sleeves, take off our rings, wash our hands and git cookin'.

No Potato Tater Salad

Ingredients:

2 sleeves soda crackers crushed (1/2 pound)

4-6 hard boiled eggs diced

1 cup onion diced

1 cup celery diced

1 cup green olive (salad mix)

1+ cup salad dressing (mayo type)

1/3 cup mustard (yellow/brown/jalapeno your favorite)

1/3 cup pickle relish (sweet/dill your favorite)

1/3 cup Capers (optional)

1 Tablespoon sugar

1 teaspoon black pepper

1 Tablespoon garlic powder

Directions:

If I remember the ole Cajun he focused on stir after adding each ingredient. I know that he stated the 2nd day you will need more salad dressing. (Those crackers do soak up all the moisture)

Notes:

No additional salt needed. There is plenty in the crackers, olives, capers and pickle relish..

Kick it up a notch and exchange the salad dressing with Ranch salad dressing.

I finally remembered the crazy Cajun's name. Justin Wilson was his name and his recipes are still available on line. I found it with Google's help. Justin Wilson's No Potato Tater salad is a bit different than mine but similar... I think mine is simpler yet more flavorful. God bless Justin Wilson for his inspiration.
