How to Make Your Own Frozen Bean and Cheese Burritos

These Will Be Cheaper Than What You Find in the Store and You Can Use Custom Ingredients

I don't normally like to promote the use of frozen foods but I have to say that they do have a certain amount of convenience to them. Lately I am needing all the help that I can get in the kitchen because my free time for cooking is stretched thin. For this reason I have been making big batches of beans to make bean and cheese burritos. The problem is that I have to eat them in a timely manner otherwise the beans stink up my fridge. I would just make smaller portions of beans at a time except that doesn't save me nearly as much time. That is why I decided to make my own frozen bean and cheese burritos.

The first thing that I do is make a big batch of beans. I use organic red, black and pinto beans and add seasoning. I am not that good at seasoning the beans yet but I like to add cumin, chili powder and some salt to the batch to give it a less bland taste. In addition I like to add some diced up organic onions at the very end to add nutrition and flavor. Cooked organic brown rice is another thing that I will ad to my beans to give them some more good nutrition. However how you want to make your beans is up to you, once you make your big batch the hardest part is over, next you'll actually be making the burritos.

Making the burritos that are going to be frozen is not hard at all. You'll want a little bit of working space. Room for your shredded cheese that you intend to add to the tortillas, your batch of beans, a plate with the tortillas on it. Keep the bag that the tortillas came in because it will house the frozen tortillas. It helps if the bag is resealable. What I do is measure a half of a cup of beans and a fourth of a cup of cheese and add it to a tortilla. Then I fold the tortilla so that there is no space inside the burrito full of air and add the burrito to the bag that the tortillas came in. You can usually fit the number of burritos that you made with the tortillas back into the bag, so there is no need to bring anymore plastic into the making of these frozen burritos.

Label the bag so you know the date that these burritos were made and place them into the freezer. I wouldn't keep them in for a super long time but I have never had any problems having them in their for a couple of weeks. One key thing that is important to keep in mind is to make sure that beans that you make are cool before making the burritos. If the beans are warm when you put them in the plastic tortilla bag they will give off steam which will get trapped in the bag and make the burritos soggy.

When it comes time to pull out the bag of burritos put them in the fridge. You can heat them up in your oven or in your microwave just like you would if you bought frozen bean and cheese burritos. You can choose different portions of beans and cheese and even add what you want to them. The beans are completely cooked when you make the bean and cheese burritos so there is no need to cook them at high or extreme temperatures. You save money doing this and save yourself a lot of time in the kitchen. Plus these preservative-free bean and cheese burritos will be much healthier for you and your family then what you normally find at the grocery store.

    I've made similar burritos, and froze them in the tortilla bag too :) What kind of cheese do you use?
