Things you will need
Canning jars (for as many jars your going to can)
¼ cup white Vinegar
1tbsp. salt
1 tbsp. sugar
1 tsp. pickling spice
½ tsp. garlic (fresh or powder)
Peppers fresh, dried, or powdered Example: Cayenne, Chile, or Jalapenos
Large pot of boiling water
Fresh Okra
Step 1) Submerge your canning jars and lids into hot boiling water using tongs. Remove the jars and set them on the counter or table.
Step 2) Trim the stem ends of the okra, and rinse them in cold water.
Step 3) Pour ¼ cup white vinegar into each jar.
Step 4) Add 1tbsp. pickling salt to each jar.
Step 5) Add 1tsp. sugar to each jar.
Step 6) Add 1 tsp. pickling spice to each jar.
Step 7) Add ½ tsp. garlic powder or 1 tsp. fresh chopped or crushed garlic clove to each jar.
Step 9) Add the okra to your jars until filled tightly, and put hot pepper to taste in now if you want spicy or hot okra.
Step 10) Fill each jar with boiling water until ¼ inch from the top of the jars.
Step 11) Use your tongs to put on the hot lids and tighten until snug. Let the jars cool and then refrigerate. Enjoy your pickled okra!
Tips) Mix your spices by turning the jars up and down after tightening the lids to ensure better flavor.
The above process can also be used to make pickles with sliced cucumbers or pickled peppers.
Warnings) Beware of burning yourself when handling hot jars; always handle hot jars with tongs or mitts.
