How to plan ahead: Feeding a houseful and you know their coming hungry.

Always plan at least one week ahead. I always plan holiday get together based on when I get the sales ad's in my mail box. Wal-Mart is great for doing comp ads and most of the time they already have the ad's matched with the exception of a few. Then once you have your sales ad's in hand go get this weeks Sunday news paper they will always have coupons. This year I had a party of ten people. Depending on the size of your family and how many visitors you're used to that's a lot of mouth's to feed on a budget. I typically only have one or two people over at a time. If I see a coupon that matches a sales ad I will clip it out and double the savings. So here goes my famous Holiday casserole recipe. Feel free to spice it up and add or remove what ever you want from this recipe but I do promise this is sure to feed everyone. Even the non-vegetable eaters will enjoy this mouth watering dish.

First you will need to get a large pot and place it on the stove.

Items you will need: 1 large pot, 1 rectangle casserole dishes, 1 mixing spoon I prefer wooden spoons.

Ingredients:

Minute white rice

Velveeta cheese

1 small bag of shredded cheese

1 can of mixed vegetables

1 rotisserie chicken

1 container of Italian style bread crumbs

Now take you rotisserie chicken and peel all the meat off the bones and place ½ of the meat in the pot on your stove. Put the other ½ of the chicken up to serve with your meal.

Measure out 8 cups of minute white rice

Add this to the pot

Add 8 ½ cups of water

Turn on the stove on medium heat and let rice and chicken come to a boil. Once the rice is good and tender and no longer crunchy turn heat down to low. Drain excess water if any.

Place pot back on the stove and add your can of mixed vegetables.

Now take your Velveeta cheese and slice the cheese in ½ and once you have ½ a container of Velveeta cheese slice the ½ you are going to use into cubes and toss into the pot.

Now you need to pre-heat your oven to 350 degrees.

Stir all these ingredients together until cheese melts and covers the other ingredients. Once the Velveeta cheese has melted remove from the stove and pour into the casserole dish. You may need a small extra dish just incase it doesn't all fit because there is still more ingredients to add.

Now that your mixture is in the casserole dish sprinkle the Italian bread crumbs over your dish and spread evenly until it you can't see the mixture. Now sprinkle shredded cheese until you are content.

Place casserole dish into the preheated oven and cook for 10 - 15 more minutes and remove from the oven.

Place the extra chicken that you put to the side on a serving plate. I always put ½ a loaf of bread on a extra plate and put the butter on the table with a butter knife for everyone to dig in.

You are now done and ready to bring your casserole out to the table and be amazed how much gets eaten. Worst case scenario most of it will be eaten in one night and you might be lucky to have one serving left over for yourself to snack on the next day.

This dish can serve up to 10 guests.
