How to Make a Pocket Stew

A Fall Family Favorite

It is the season for Cider and donuts, Apple butter makin' time, jumping in a big pile of leaves, etc. One old family tradition was what we called "Pocket Stew" I have had these cooked over an open fire, on a charcoal fire, on a gas grill, even baked in an oven...once it was an old wood fired oven too., I have also enjoyed this concept made in literally 1000s of different ingredients. Today most night there are only two for supper. We still make the entire recipe because it will reheat in the microwave for several suppers or a quick lunch. Let's light the fire, toll up our sleeves, take off our rings, wash our hands and get cooking.

Bubba's Pocket Stew

Ingredients:

1 pound smoked sausage (Your favorite) Cut in bite size

1 pound boneless skinless chicken (boobs or thighs) Cut in bite size

6 little new potatoes wash & quartered do not peal

1 sweet potato washed & diced in bite sized pieces do not peal

1 Crooked neck squash washed, seeded, and diced in bite size pieces

1 small Hubbard squash washed, seeded, and diced in bite size pieces

2-3 carrots grated

1 green bell pepper washed, seeded, diced in bite sized pieces

1 softball sized onion coarse diced

1 cup frozen peas

¼ cup melted butter (butter is better)

¼ cup olive oil (EVOO)

1+ Tablespoon Garlic powder

1 teaspoon dry basil

1 teaspoon dry oregano

½ teaspoon Sea Salt

½ teaspoon fresh ground pepper

Directions:

In a small bowl whisk together melted butter olive oil, garlic, basil, oregano, salt, and paper, set aside. In a large bowl toss all other ingredients. Toss second time after pouring oil mixture over it. Prepare 8 pieces of double foil and divide this mixture between these and fold into a sealed pocket. Place on a med-high fire or 350 oven. Turn every 10 min for 30-40min.

The Queen Goddess like a plate of smoky baked beans or perhaps butter beans with this just to make it have a picnic feeling to the meal....add candles and it has picnic magic.
