Potato Candy
Ingredients:
1/2 cup cooked, fork-mashed potatoes, seasoned with butter and salt
1 box plus 1 1/2 cups powdered sugar
1/4 cup peanut butter
Optional: cinnamon-sugar, crushed nuts, colored sugar, sprinkles.
Peel, wash and quarter about four potatoes. Put in a saucepan, cover with water, and boil until potatoes are tender when poked with a fork. Drain, season with salt and butter, and mash with a fork, or a hand-held potato masher. Measure out about a 1/2 cup of mashed potatoes.
Mash about half of the sugar in to the potatoes.
Add peanut butter to the mix. Work it through well.
Work in the other half of the sugar until the mixture is stiff.
Roll the mixture in to rolls about the diameter of a silver dollar and no longer than six inches.
You can roll the rolls in to toppings such as cinnamon-sugar, crushed nuts, colored sugar or sprinkles if you wish.
Slice the rolls in to 1/4" pieces.
Line a cookie sheet with parchment paper. Put the sliced pieces on the cookie sheet and refrigerate just until set. Store in Tupperware, or in a tin.
Serve on a festive tray, or give as gifts in holiday themed containers.

Hmmm ... I just baked potatoes tonight. Is this really good? It seems like an odd combo - potatoes, chocolate, pb, etc. - I might have to try it, though :)
