How to Make Quick Cinnamon Raisin Bread

My Dad was the ultimate bread and butter man. He wanted bread and butter with every meal. He dearly loved the nut breads...he could put extra butter on them. I did find one of those special "Quick Bread" recipes that would make his mouth water. The Queen Goddess has endorsed it as "Fit To Eat"... I'm not sure if it's good enough for company. I'll eat the first loaf myself just to be sure...I always double the recipe. OK to make a quick and delightful Cinnamon Bread just roll up your sleeves, take off your rings, turn your ball cap backwards, scrub your hands and let's get baking.

Quick Cinnamon Raisin Bread

Ingredients:

½ Cup oil (Your favorite light oil)

1 ¼ Cup Brown Sugar (Light or dark)

1 large chicken egg

1 Cup Buttermilk (Substitute Whole milk plus a Tablespoon lemon juice)

1 Tablespoon Baking Soda

1 teaspoon salt

2 Cups all purpose flour

1 cup golden California Raisins

¾ cup white sugar

2 Tablespoon ground cinnamon

Directions:

Preheat oven 375. Mix white sugar and cinnamon and set aside. Mix oil, brown sugar, large chicken egg, and buttermilk. Sift Flour,salt, and baking soda together and slowly add to egg and buttermilk mixture. Fold in raisins. Pour half this batter into a greased loaf pan. Sprinkle half the white sugar & Cinnamon mix on top and run butter knife through to swirl. Pour remaining batter into pan and sprinkle remaining white sugar and cinnamon mix swirl again with knife. Bake 35-45 min or till pulls away from the side of pan. Now the difficult part...Wait till cool before cutting!

Notes:

This recipe doubles easily so make two and give a loaf to a friend. If you are a whole wheat person divide the flour half all purpose and half whole wheat. Rye flour is also an interesting flavor change. Remember a recipe is only a road map you can enhance any recipe with your imagination and intuition. This cinnamon bread does make some wonderful French Toast and Bread Pudding... My personal favorite use for the fresh Cinnamon Raisin Bread is a peanut butter and grape jam sandwich.
