Hellfire Ridge dip is a old family recipe I've finally decided to share with the world. Its a wonderful blend of creamy and spicy, that will set your taste buds ablaze and get your heart to pounding, and it just might start to you sweating if you eat enough of it. Did I mention this dip was HOT?. I've served this dip at many of my sports parties in the past and plan on serving it again this year during the baseball and Nascar seasons. It was a hit during the past football season as well. Men seem to love proving they can eat this dip and take it like a man. The beer flows freely at the events I hold when this dip is present. Of course this proves nothing really. The beer flows freely at any event I hold that involves a bunch of men standing or sitting around a big screen TV screaming and shouting at sports teams. This dip contains several different types of peppers so eat at your own risk. I've been requested by several victims....err.....guests that I should publish a caution warning with this recipe but since I've had none of the side effects these people claim I'm inclined to believe its more of a joke than any real threat to your digestive system. However if it takes the hair off your tongue, consider yourself warned.

Making a really good hellfire ridge dip at home is a simple and easy task. It will be very easy for you to create your own family tradition from the basic example listed below.

Ingredients:

8 ounces of fresh chipotle peppers. Avoid the canned chipotle peppers. They usually have way to much salt and MSG in them to be a good choice for a really good hellfire ridge dip. Try and get a no name brand as they are the same quality as any brand name will be. Never pay for a name when you can be paying for more food when making a really good hellfire ridge dip.

8 ounces of fresh red bell peppers. ( finely diced )

4 ounces of pickled jalepenos. ( finely diced )

1 tablespoon of your favorite hot sauce. I use Durkee brand but any you like will do.

1 / 4 tablespoon of cayenne pepper

1 / 8 tablespoon of white pepper

4 ounces of pimento peppers. ( finely diced )

1 large clove of fresh garlic. ( finely diced )

1 small onion. ( finely diced )

1 tablespoon of prepared horseradish

1 cup of smoked cheddar cheese

2 / 3 cup of pepper jack cheese

1 /2 cup of Monterey jack cheese

Directions:

Place all your peppers, garlic, and onion in a pot with a little water and cook until the peppers are soft for your really good hellfire ridge dip. Drain in a strainer while you put your cheeses in a pot and heat them until they are melted. Then add your sour cream, hot sauce, horseradish, pepper mixture and stir thoroughly. Pour out of your pot into the bowl you intend to serve your really good hellfire ridge dip. Serve this dip while it is still hot.

Really good hellfire ridge dip is best served with crackers or thick chips while hot. It makes a excellent party dip or luncheon appetizer. Try a scoop of really good hellfire ridge dip on your next baked potato for an amazing taste treat and if you dare it makes a great topping for broccoli and cheese.
