PH stands for Potential Hydrogen. In its simplicity, it is a scale that, measures acidity or alkalinity (base), from one to fourteen with seven being neutral. Levels above seven are more alkaline (base) while levels below seven are more acidic.
Every type food in its nature is, acidic, natural or base and if you know the PH of the food that stained your cloth, all you need to do is to choose the right stain remover.

Act quickly. The sooner you get the stain handled the more you likely to remove it out. Otherwise, it will merge with the color of the fabrics. Then work from the outside in, not to spread the stain.

If it is solid, scoop it up with a dull edged knife before blotting, for example, mayonnaise or ketchup

Therefore, if the type of stain is acidic as coffee for example then, you want to use an alkaline cleaner. If the residue formed from calcium, you want to choose an acidic detergent.
